4 Veal Chops (1inch (2.5cm) thick)
freshly ground pepper
1 tablespoon oil 15ml
1 tablespoon butter 15ml
1 small onion, minced 1
cup grapefruit juice 190ml
1 tablespoon grated fresh ginger root 15ml
cup undiluted canned beef stock 125ml
1 tablespoon honey15ml
1 tablespoon fresh chopped mint 15ml
cup sour cream 60ml
Methods:
Pepper Veal Chops.Heat oil in pan,add butter when pan is hot.Cook chops over moderate heat until just pink.Keep warm in the oven while preparing sauce.
To make the sauce, add onion to pan,saute until softened but not brown.Add grapefruit juice and ginger, simmer 5 minutes.Add beef stock and honey, simmer additional 5 minutes.Add mint.Spoon some of the hot sauce into the sour cream and stir until smooth.Then add cream mixture to sauce and whisk until smooth.Do not allow to boil.
To serve spoon sauce over the chops and garnish with fresh mint.
