Veal Liver with Bacon and Onions

Ingredients:

8 slices of bacon
4 thin Veal Liver Slices
½ teaspoon salt 2.5ml
1 large onion, finely chopped
freshly ground pepper

Instructions

Fry bacon until crisp.Drain on paper towels and keep warm.Sauté the onion in the rendered bacon fat until golden.Remove from the pan with a slotted spoon and keep warm.Sprinkle the liver with salt and pepper.In the same fat, brown the Liver 3-4 minutes on each side.Transfer to a serving dish and cover with the bacon and onions.

Serve with: applesauce and mashed potatoes.
